1tsp Cumin seeds
0.5tspFfennel seeds
1 Bay leaf
2 Medium onoins, sliced
3tsp Ground coriander
1tsp Chilli powder
1tsp Garam masala
1 tsp Ground turmeric
350g Chicken, diced into 4cm pieces
2 Green chillies, slit
0.5tsp Black peppercorns, crushed
1tbls Fresh coriander, chopped to garnish


How Do I Make Dry Spiced Chicken?

Here is how you make Dry Spiced Chicken:

Heat the oil in a pan. Add the cumin seeds, fennel seeds and bay leaf. When they begin to crackle add the sliced onions and fry for 10-15 minutes over a low heat. Add the ground coriander, chilli powder, garam masala and ground turmeric. Sprinkle with a little water and continue to fry over a low heat.Add the diced chicken and green chillies and fry, stirring continuously. Sprinkle with more water if required.Reduce the heat and cook, covered, for 10-15 minutes.Add the crushed black peppercorns and season to taste.
