Drain and reserve liquid from canned tomatoes. Pierce chicken with fork and place in a plastic bag. Mix garlic, salt, pepper, thyme, and 1/3 tbsp. of cumin, cayenne pepper, and paprika into approximately 1/4 cup of reserved liquid and pour over chicken. Marinate for at least an hour. (This can be done the night before or in the morning, too.)2. Combine tomatoes and additional tomato liquid in saucepan, and add green pepper, onion, and remaining spices. (Extra spices may be added here if needed- if you're worried about overspicing, start with a very small amount. Can always add more through cooking.) Cook on medium-low heat until liquid begins to bubble.3. Remove chicken from bag and cut into chunks, adding to pan with as much of the marinade as possible. Stir in and cover pan, adjusting heat and spice levels as needed. Make sure that chicken is cooked all the way through and dish is hot.4. Serve as is, over brown rice, or with a small salad. Other veggies can be added as well- mushrooms, eggplant, spinach, etc. Just add more tomatoes and liquid.
