1 packet Vegetable Bullion enough to flavor 2 cups water
1/4 square S&B Golden Hot Curry sauce
2 Tbs Greek Nonfat Plain Yogurt
1/4 tsp Cayenne Powder or to your taste
1tsp Dried Chili Flakes or to your taste
1tsp curry powder or to taste
2 Tbs Extra Light Olive Oil
2 cups Water

Heat 2 Tbs olive oil in large potBrown chicken breasts approx. 4-5 minutes each sideRemove browned chicken from pot and set asideIn same pot, Sautee garlic until fragrantAdd 2 cups water and let boilAdd vegetable bullion and stir until it dissolvesAdd, onion, potatoes, sweet potatoes and carrotsBring to a boil, then lower heat to med-low and simmer until potatoes are almost fork tender or half cookedTake out vegetables from pot using a slotted spoon and set asideKeeping broth to a simmer, add the curry cube and stir until it is dissolvedAdd yogurt and stir until incorporated into curry sauce(If sauce is too thick, add water a 1/4 cup at a time until desired consistency)Add cayenne powder, chili flakes, and curry powder (spice it up or down to your liking)Add salt to your tasteAdd the browned chicken, half-cooked vegetables and red bell pepper to the sauce.Stir, raise heat to med-high and bring to a boilLower heat to med-low, cover pot and simmer for an additional 10-15 minutes or until potatoes are fork tender, gently stir every 5 minutesServing Size:?Makes approx. 8 1-cup servings
