Add the 2 cups of peppers (jalapeno or cherry red) whole, and approximately 1/2 cup of liquid if using jarred peppers. Cover and simmer on medium to low heat for about 30 minutes. At end, add the 6 oz of white wine and simmer again, uncovered, on medium high heat for about 15-30 minutes. Chicken should pull apart with a fork, shred the meat if making sandwiches. Serve as a sandwich on hard rolls or over brown rice for a main course. Makes 6-8 sandwiches.Note: To tone the heat, use a milder pepper or omit the juice from the jar. To add more fire, add some crushed red pepper at the same time you had the whole peppers. The longer this dish simmers or cooks, the better it gets.
