Let cool. Mix egg, spinach, ricotta, bacon, pepper, salt and sauteed onion and garlic. Spread mixture in center of each breast, roll up, fix with toothpick and place in 9x13" pan.Saute 8 oz pkg of sliced mushrooms in same frying pan used for onion and garlic, pour sauteed mushrooms over chicken breasts. Add 1/2 can condensed chicken broth over breasts, cover with foil.Bake 1/2 hour, covered, at 425. Great with parmesan couscous.
