2 chicken breast, sliced in half and then flattened.
1 pkg frozen spinach
8 sliced cooked bacon, crumbled
1 tbsp olive oil
1/2 medium onion chopped
1 clove garlic
1/2 tsp crushed red pepper flakes
1/4 cup grated parmesan
2 oz shredded cheddar + 1oz shredded cheddar
1/2 cup bread crumbs
2 large eggs, beaten

Here is how you make Bacon and Spinach Stuffed Chicken Breasts:

Slice chicken breast in half, lengthwise. Beat to flatten, makes easier to roll and stuff. In frying pan over medium heat sautee onion and garlic in olive oil. When they begin to soften add in red pepper flakes. Then add in Spinach Leaf, cook until softened. Add in Parm cheese, crumbled bacon, 2 oz cheddar and bread crumbs. Stir until combined and heated evenly through. Remove from heat. Stir in beaten egg.Preheat oven to 350. Spray 8x8 glass baking dish with Pam. Place flattened chicken in one by one. Place a heaping spoonful of spinach mixture in center of chicken, roll up and pin close with toothpick. Place pinned side down. Repeat with remained 3 breast halves. Sprinkle remaining spinach mixture over the top. Layer with remaining 1oz cheddar. Bake uncovered for 25 mins.
