1/4C Panko (or regular) Breadcrumbs
1/2 tsp Black Pepper
1 oz Hard Parmesan Cheese shaved
1 C cherry tomatoes
1 bag spinach
1 Red/Purple onion halved and then sliced
3Tbl Fresh oregano

These make huge burgers - you could easily get six decent sized burger patties out of this if you're trying to stretch a dollar or calories. =-)TOPPING:Cut onion in half and then slice thinly, combine with tomatoes and 2 of the cloves of garlice in a lightly greased saute pan. Cook on medium until tomatoes have split and garlic and onion are translucent. Add spinach and oregano and cover, cooking until spinach is wilted. When spinach is done, make sure all tomatoes are smashed and set aside.BURGERSPut all ingredients except bread crumbs and cheese in Vitamix or Food Processor and grind/blend until it is the consistancy of ground beef or sausage. Remove from Vitamix/Food Processor and place in a bowl, add bread crumbs and mix together by hand.Form 4 burger patties and grill or cook in a lightly greased pan. When burgers are almost done, sprinkle cheese on the top of each patty and cover pan until cheese is melted.
