2 c. sliced fresh mushrooms
1/4 c. minced sweet onion
1/2 T olive oil
4 chicken thighs with bones, skin removed
2 T dry vermouth
1/2 c. heavy cream
1/2 c. chicken stock (can use 1/2 tsp Better than Bouillon chicken paste & 1/2 c water)
6 c. fresh spinach

Here is how you make Chicken thighs with Vermouth Mushrooms and spinach:

In heavy 10 " frying pan, saute mushrooms in olive oil and butter over medium heat. Remove mushrooms from frying pan and set aside. In same pan, add remaining olive oil and saute minced onion over medium heat 3-4 minutes until tender. Add chicken and saute over medium-low heat 12 minutes; turn over and saute 8 minutes more. Remove chicken from pan. Increase heat to medium high. Add vermouth followed by heavy cream. Reduce over medium heat for 1-2 minutes until thickened. Add mushrooms and stir. Add spinach over top and cover to steam. Cook until spinach is wilted, about 4 minutes.
