2 medium sized bonless, skinnless chicken breasts
1/2 package (5 oz) of fresh spinach, chopped
2 large portobello mushrooms, diced
2 cloves garlic, minced
1/4 onion, minced (Red tastes best)
1 tbsp fresh parsley, chopped
1 tsp olive oil
1 tbsp shredded parmesan cheese to top
salt and pepper to taste


How Do I Make Eric's Chicken stuffed with Spinach and Portobello?

Here is how you make Eric's Chicken stuffed with Spinach and Portobello:

Heat olive oil in pan, add garlic and onions for a minute or so. Add mushrooms, for a minute or so. Add spicnach, parsley, some rosemarry if you like, a dash of salt and some ground pepper. Mix and cook until spinach is all soft and... cooked. Mean while, remove the fillets (I chop up the fillet and stuff them so as to not wastegood meat) from the breasts and butterfly cut them so they're wide and flat. You can pound it into a paillarde so it's nice and flat... cooked really quick this way. Put half the spinach mix in each breast and tightly roll it like a cigar. It will kind of look like a open-ended eggroll. Place them in a baking dish and sprinkle a litte shredded parmesan cheese on top. Cook them in oven pre-heated to 400 degrees until chicken is cooked (but don't over-cook... about 15-20 minutes, depending on thickness of chicken). Remove and eat!Recipe not awesome. Could use a little something. Swiss or ricotta cheese inside would be nice. A little wine while cooking the spinach would also have helped.
