1/4 cup cheddar cheese
1/4 - 1/2 cup Mozzarella Cheese
2 chicken thighs (boneless and skinless) - cooked and diced
1/2 cup chicken broth (or drippings from cooked chicken)

Here is how you make Spinach, Artichoke, and Chicken Bake:

Boil pasta as directed on package. chop spinach and artichokes and stir fry in a large skillet until spinach is cooked. Drain Pasta and return to pot, add spinach and artichoke mixture, half of Feta cheese, and 1/2 cup cheddar cheese, diced chicken, and 1/2 cup broth/ drippings - mix well.Transfer mixture to 9x11 cake pan or casserole dish - sprinkle Mozzarella and remaining Feta over the top. Bake, uncovered, for 35 minutes at 350 degrees. Can be made ahead and frozen for an easy dinner for busy evenings!! Serving Size:?makes roughly 6-7 servings.
