3 T gluten free AP flour
1/4 white wine
1 1/2 cups skim milk
1/4 cup + 2 T parmesan cheese
2 oz low fat cream cheese
3/4 cup low fat mozzarella
14 oz artichoke hearts, chopped
2 cups baby spinach, packed
salt & pepper

Here is how you make Spinach Artichoke Bake w/ Chicken:

1. Cook pasta to slightly under al dente2. Saute shallot/onion and garlic in butter and oil3. Sprinkle flour over mixture and stir to incorporate. Let cook one minute4. Add wine. Cook 1-2 minutes5. Add milk, stirring frequently until thickened6. Season with salt and pepper to taste7. Add 1/4 cup parmesan, goat cheese and 1/2 the mozzarella. Whisk until well mixed8. Add artichoke hearts and spinach. Heat until spinach wilts9. Add pasta to mixture and pour into casserole dish10. Top with remaining mozzarella and 2 T parmesan11.
