The ingredients for Spinach, artichoke cheesey chicken bake are:

1 Container of Pillsbury reduced fat biscuits
3 cups frozen and drained spinach
2 cups of Shredded mozzarella, divided in half
1 can of artichoke hearts, rough chopped
1 8 oz. container of 1/3 less fat cream cheese
1 cup of fat free sour cream
1/2 cup grated parmesan (or parmesan blend cheese)
1 tsp cayenne pepper (I left it out)
Salt and pepper to taste.

Cook your chicken however you want, BBQ, oven, skillet, boil it..
In a medium bowl, mix the cream cheese, sour cream, parmesan, 1/2 the mozzarella, salt and pepper and cayenne together.
Rough chop the artichoke hearts.

Add spinach (squeeze excess liquid out of it), artichoke, chicken all the bowl and mix together with the cheese mix.

Cut each biscuit into 4 peices and gently fold into the mixture, then pour into a 9x9 baking pan that has been sprayed with PAM. Add the rest of the mozzarella and bake at 350 for 1 hour, covering with foil half way through.
