1 1/2 pounds of boneless, skinless, chicken breasts cut into 1/2 inch cubes
5 pieces of Turkey Bacon (chopped)
1 small onion, chopped
5 cloves of garlic minced
3 tables spoons of white flour
1 cup of reduced sodium chicken broth
1/2 cup of white wine (or use additional chicken broth if you want to substitute)
1/3 cup of skim milk mixed with 2 tablespoons of flour (this is a heavy cream substitute). Whip it well.
3 Roma tomatoes
1 small can of (2 1/4 ounces) of sliced olives, drained
1/3 cup of Parmesan cheese, grated
1/2 teaspoon of ground sage
1/2 teaspoon of dried thyme
1/2 teaspoon of salt
1 teaspoon of ground black pepper
2 tablespoons of olive oil

Here is how you make Bridget's Mediterranean Chicken with Spaghetti Squash:

Cut the squash in half lengthwise and scoop out the seeds (like you do a pumpkin). Place squash directly on microwave glass with cut side down (skin on top) and microwave for 15-18 mins or until tender.In a nonstick skillet, cook bacon and onions over medium heat until the onions are golden brown. Using a slotted spoon, remove mixture and set to side. Leave juice in pan. In the same skillet, add olive oil and cook the chicken cubes on medium heat until no longer pink.
