In a 6 qt Dutch oven or large stock pot, melt butter and add chicken thighs. Brown on both sides (about 5 min per side). Remove from pot and set aside. Add celery, carrots, onion, oil, and herbs to pot and saute in butter and chicken drippings. Add chicken back to pot. Pour 4-6 cups of water over chicken and vegetables, or enough to cover chicken. Bring to boil, then cover and simmer for 30-40 min. Remove bay leaf before serving.Serving Size:?1.5 cup servings. Serves 8.
