1 cup chopped Onions (1 med. Onion)
1 tsp. Extra Virgin Olive Oil
6 cups Hot Water
1/4 tsp. Salt, or to taste
1/8 tsp. Pepper, or to taste
2 medium (2-1/4" to 3-1/4" dia.) Potato, peeled and diced into about 1-inch cubes (about 2.5 cups)
1.5 stalk, medium (7-1/2" - 8" long) Celery, sliced thin (about 1 cup)
10-12 oz package frozen Mixed Vegetables (corn, peas, carrot, green beans)
1/4 tsp. Salt, if desired
1 cup Cold Water
1/4 cup Flour

1 cup Flour
1/2 tsp Dried Parsley, crushed
1 1/2 tsp. Baking Powder
1/4 tsp. Salt

Here is how you make Chicken Stew with Parsley Dumplings, ala Cindy Joy:

1. Saute Onion in the teaspoon of Olive Oil. 2. Add the whole Chicken Breasts, 6c. Hot Water, 1/4 tsp. Salt, and 1/8 tsp. Pepper. Bring to a boil. Then reduce heat, cover, and simmer about 1 hour. 3. Remove chicken and cool until can handle. Then dice chicken into about 1-inch pieces. 4. Stir into broth; the chicken, potatoes, celery, mixed vegetables, 1/4 tsp. Salt (or to taste). Cover and simmer about 30 minutes. 5. Prepare Dumpling Dough: Mix together the dry ingredients with a fork. With the fork, mix in milk until combined. 6. In a tightly closed jar, shake together the 1cup Cold water and 1/4 cup flour. Gradually stir flour and water mixture into the cooked stew. Stirring constantly, heat to boiling and cook 1 minute. 7. Reduce heat to strong simmer. Drop dumpling dough by spoonfuls (about 12) onto bubbling stew. Try to drop onto pieces of food, not directly into liquid. 8. Cook uncovered 8-10 minutes. Then cover and cook 8-10 minutes more.
