Place in a medium saucepan with the olive oil and saute on a gentle heat for about 6-7 minutes or until onions begin to look translucent. Add the chopped chicken breasts and turn up the heat to a medium high. Fry until chicken has turned from pink to white. Season. Pour in the two tins of soup and refill one of the tins with either chicken stock or water and add to chicken mixture. You can add more later if you feel the stew is too thick. Stir until well incorporated. Add the peas and sweetcorn and turn back down the heat so the stew has a gentle simmer. Cook for 30 minutes approx or until chicken is fully cooked and potatoes are tender.
