3 Tablespoons olive oil
2 large leeks
2 garlic cloves, minced
1 carrot, thinly sliced
4 Tablespoons chopped fresh flat parsley
Coarse salt and cracked black pepper
1 pound chicken tenderloins
6 small potatoes
2 (14 oz) cans chicken broth
1/3 cup white wine
Juice of 1/2 lemon
2 Tablespoons chopped fresh mint
1 Tablespoon torn fresh basil

Heat 2 Tbsp. olive oil in a pot over medium-high heat. Saute the leeks, garlic, carrot, and 3 Tbsp. parsley. Season lightly with salt and pepper.

Saute the vegetables until tender. Add the chicken, potatoes, broth, and wine; bring to a simmer.

Cover the pot, reducing heat to medium-low. Allow to simmer 25 minutes or until potatoes are tender, stirring occasionally.

Remove from heat; add remaining Tbsp. oil oil, remaining parsley, lemon juice, fresh mint and basil.
