This is a meal we often eat. It is quick and easy and it is very tasty. and does not have a ton of calories. One other ingredient I use is a packet of "beef broccoli stir fry seasoning" found in asian section of grocery store. I do not prepare I just sprinkle on the meat and veggies as they are cooking. You can adjust the amount to your liking but I use the entire packet or you could choose any seasoning you prefer.

5-Summer squash sliced
2-large green peppers (Bell Peppers) cut into thick strips
5- medium cooking onions cut into thick slices
1-can of water chestnuts sliced
1/4 cup soy sauce (optional or to your liking)
3-tblsp olive oil (or your regular cooking oil)

Use a large frying pan or wok if you prefer. Add the oil and saute the chicken until it is partly cooked. Add all the veggies and continue cooking until the veggies are cooked to your liking. Sprinkle seasoning packet over and keep stiring the meat veggie mixture. Add the soy sauce if you are using. Serve while very hot.This makes 8 servings.
