The ingredients for Chicken Salsa Stir Fry are:

2 tbsp vegetable oil
1 medium onion finely chopped
1 medium size green pepper finely chopped
1 medium size zucchini cut in 1 inch strips
1 lb. boneless skinless chicken breast cut into thin strips
1/2 cup medium or hot salsa
2 tbsp soy sauce
4 whole wheat tortillas


How Do I Make Chicken Salsa Stir Fry?

Here is how you make Chicken Salsa Stir Fry:

In a large skillet, heat 1 tbsp oil over medium high heat. Saute green pepper, onion and zucchini for 3 to 5 minutes or until tender. Remove from pan. Add remaning oil to skillet. Cook and stir fry chicken about 5 minutes until no longer pink. Add salsa and soy sauce and heat through. Return vegetables to skillet and heat. Meanwhile, wrap torillas in foil. Heat in 350 deg oven for 5-10 min (or wrap in paper towels and microwave on High for 30 seconds.) To serve, spoon chicken mixture onto tortillas and wrap up. Makes 4 portions.
