medium yellow, orange or red sweet pepper
medium zucchini
1 cup salsa
1 tsp chili powder
1 cup corn (either frozen or fresh)
can of black beans, drained and rinsed

Here is how you make Fajita Chicken Stir-Fry:

Saute chicken in oil until done. Cut into strips or bite size pieces. Add vegetables and saute until tender (about 2-3 minutes). In small bowl stir together fajita seasoning mix and 1/2 cup of water. Add to chicken and vegetables. Stir together salsa and chilli powder (use more than 1 tsp. if you want the dish spicier). Add the salsa mixture to the chicken and veggies. Add corn and beans to the skillet.
