It was recently added to a line of product that I sell and we were challenged to come up with a recipe using one of the items from the line. This turned out to be one of the best meals I have made in a long time! I will definitely be making this often! One mango, divided as follows:
Mango, 8 slices
Mango, 1/2 cup chopped
Two Sisters Gourmet Island Ponzu Sauce, 1/2 cup (reserving 2 tbsp)
Instant Whole Grain Brown Rice, 1 cup
99% fat free chicken stock, 1 cup
Scallions, 1/2 cup, chopped
Carrots, 1/2 cup, chopped
Olive Oil, 1 tsp


How Do I Make Island Ponzu Stir-Fry with chicken and mango?

Here is how you make Island Ponzu Stir-Fry with chicken and mango:

In a ziplock bag, add chicken breasts, 8 mango slices, 1/2 cup Island Ponzu sauce (minus 2 tbsp reserved for rice below), and garlic powder. Gently squeeze the bag to completely coat chicken breasts with mixture. Place in refrigerator overnight or for at least 2 hours to marinate.Preheat oven to 375 degrees. Place marinated chicken and marinade in shallow baking dish, arranging mango slices on top of chicken breasts. Bake for 45 - 50 minutes or until chicken is no longer pink (registering 170 degrees with a meat thermometer), basting the chicken at 20 minutes.During the last 15 minutes of the chicken's cooking time, prepare the instant rice as directed on package, using chicken stock instead of water. Heat olive oil in a sautee pan. Add chopped carrot and cook until tender. Add mago and scallions, cooking for about 2 minutes. Add the 2 tbsp of Island Ponzu sauce reserved from earlier, mix well. Add cooked rice to veggies and mix well. Add salt and pepper for taste.Serve one chicken breast with mango slices along side the rice and veggies.
