4 tsps Canola or vegetable oil
1 medium red onion, halved lengthwise then sliced
3/4 C zucchini, cut into thin bite-size strips
3/4 C trimmed fresh pea pods, tips and strings removed
12 oz boneless/skinless chicken breast, cut into thin strips
1/4 fresh pineapple (1 cup), cored and cut into bite-size pieces
3 Tbsp bottled stir-fry sauce (I used Kikkomans preservatitve free)


How Do I Make Pineapple-Chicken Stir-fry?

Here is how you make Pineapple-Chicken Stir-fry:

In a wok or large skillet, heat 2 teaspoons of oil over med-hi heat. Stir-fry onion in hot oil for 2 minutes. Add zucchini and pea pods and stir-fry for another 2 minutes. Remove from wok or skillet.Add remaining 2 teaspoons of oil to skillet/wok, heat and add chicken. Stir-fry for 2-3 minutes or until chicken is tender and no longer pink. Add onion mixture into chicken. Add pineapple and Stir-fry sauce cook and stir about 1 minute or until heated thoroughly.Great served over Brown rice (not in nutritional info) and garnish with pineapple wedges.Serving Size: makes 4 servingsNumber of Servings: 4Recipe submitted by SparkPeople user MOONWSPR.
