4 tbsp Extra Virgin Olive Oil
1 tsp. dried basil
coarse sea salt

Here is how you make Skinny Chicken Stir Fry:

Heat 2 teaspoons of the oil, and add half of the garlic and ginger. Add chicken. Add salt and freshly ground pepper. Add a splash of light soy sauce for color and flavor, and stir fry until just cooked. Remove to a plate and set aside. Add remaining 2 t oil to pan. Add remaining garlic and ginger, and the chopped onion. Stir fry for 1 minute, untll onion separates into strips. Add peppers and zucchini, 1 t. dried basil, coarse salt, and freshly ground pepper. Stir fry until just tender, about 2 more minutes. Add chicken back to pan and cook for another minute, until hot and well mixed.
