Here is how you make Thai Style Chicken Stir Fry:

1) Combine rice vinegar, brown sugar, lime juice, red curry paste and crushed red pepper flakes in a large Ziploc bag. Add chicken; seal and marinate in fridge 15-30 minutes, turning once.2) Remove chicken from the bag, reserving marinade. Heat 1 Tbsp oil in large non-stick skillet or wok over medium-high heat. Add chicken; stir-fry 4-5 minutes. Remove chicken from pan; keep warm. 3)Add remaining oil to pan. Add onion, carrot and mushrooms to pan and stir-fry for 3-4 minutes. Add reserved marinade, scraping pan to loosen browned bits. 4) Add coconut milk and fish sauce, bring to a boil. 5) Reduce heat and simmer for one minute.
