1/2 cooking onion, cut into chunks
1/2 large red pepper, slivered
2 celery stalks, cut into chunks
1 tbsp cajun seasoning
fresh ground black pepper
3 garlic cloves, diced
1 tbsp flour
2 tbsp orange juice, unsweetened
1 tbsp maple syrup
1 tbsp grape seed oil

Here is how you make Tom's Stir-Fry Orange/Maple Chicken:

Prepare all vegetables and meat putting them in small bowls or dishes. Prepare the slurry by slowly adding orange juice to the flour and whisking until no lumps are seen then add the maple syrup and whisk again.Heat pan, add oil and add chicken pieces stirring until part cooked and browned. Take the chicken out and put into warmed bow. Add onions, then garlice, celery and pepper stirring for a few minutes until starting to soften, put chicken back in the pan and keep stirring. Add the slurry for the last minute or so of cooking.You can, if you wish, dice carrots and prepare green beans, add them to the pan for a few minutes before putting the chicken back in.
