1 lb goose breast
1 T smoked paprika
1/2 t black pepper
2 T whole wheat flour
2 T olive oil
1 T butter
1 med yellow onion, chopped
8 oz diced mushrooms
3 cloves garlic, minced
1 3/4 c no salt added chicken stock
2 T tomato paste
1 bay leaf
1/4 plain 0% fat greek yogurt
fresh chopped parsley for garnish if desired

Here is how you make Paprikash Chicken (goose) Stroganoff:

Cook goose breast in crockpot on low for 6 hours or until tender. Cube or shred then toss with flour and brown in olive oil. Remove and set aside. (chicken would be cubed raw, tossed in flour, then set aside) Add butter to the pan, stir in the onions and mushrooms. Saute until the onion is translucent and onion and mushrooms are browned, about 5 minutes. Add the garlic and cook for another minute, until fragrent. Pour in about 3/4 c of chicken stock and deglaze the pan by scraping up the bits. Stir in the tomato paste, whisking to combine. Add the rest of the chicken broth and bay leaf, stirring well. Add meat back to the skillet and simmer over med/low heat until chicken is cooked through and the sauce thickens slightly, 5-6 minutes. temper the yogurt by mixing in a tablespoon or 2 of the hot liquid then stir into pan.
