1 cup sharp cheddar cheese
1 cup 2% mexican cheese blend
1/2 cup light sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
1 large ear of corn on the cob, removed from cob, or about 1 cup of frozen corn

Remove tops and seeds from peppers, saving and finely dicing the tops and discarding the stems and seeds. Saute diced onion, diced tops of peppers, 4 garlic cloves in 1 tsp olive oil. When soft add corn. Thaw hash browns and add onion mixture. Add shredded chicken, cheeses, sour cream and soups to mixture and combine well. Stuff mixture into each pepper, rounding on top.
