How Do I Make Chicken Florentine Stuffed Portobello Mushrooms?

Here is how you make Chicken Florentine Stuffed Portobello Mushrooms:

Preheat oven to 375. Line cookie sheet with foil then make two foil rings to hold mushrooms off of cookie sheet while baking. Remove stems and carefully remove gills with a spoon. Lightly salt thee the inside of the mushroom with sea salt. Invert on a paper towel lined plate to draw out excess moisture. Sauté onions in cooking spray. When onions are translucent, add garlic and quickly sauté.being careful not to burn. Once done remove from skillet with a slotted spoon and set aside. In the same skillet add olive oil, chicken, and herbs. Sauté until chicken is done, but do not overcook. Remove from skillet. Add spinach and cook until it has cooked down a bit. Add onion and garlic mixture and cook until spinach is cooked down and water is gone. Add chicken to food processor and pulse 5 times. Remove and place in a medium bowl. Next add spinach mixture to food processor and pulse until desired consistency. Add in Monterey Jack cheese then combine the spinach mixture into the chicken. Turn mushroom over and stuff about 1 cup of spinach - chicken mixture into each mushroom. Amount will vary depending on size of mushroom. Cover the stuffed mushrooms with mozzarella cheese and bake fr 20 minutes. Remove from oven and place in broiled briefly to brown cheese. Let cool fr 5 minutes and enjoy.
