In a large pot, bring 8 cups of water to boil. Add chicken breasts and bring to a boil. Cover and let simmer for 5 mins. Season with pepper and 1 tbsp butter. Remove chicken from pot and place on cutting board.Let cool for 3 mins. Preheat oven at 350* F. Slice a horizontal hole halfway through the chicken (do not slice chicken breast completely open). In a bowl combine melted butter, apples, almonds; stir until all is covered with butter. Stuff apple and nut mixture into chicken and bake for 10 mins on baking rack.
