This is an adaptation of the Cheesy Restaurant Dish that is usually destroyed nutritionally by by adding the likes or bacon and ranch dressing. I modified this from the recipe found in Cook This, Not That (David Zinczenko & Matt Goulding) by using fresh mozzarella, cashews and frozen spinach, instead of shredded mozzarella, pine nuts & baby spinach. Oh, I also used pre-cut thin chicken breasts from Perdue Farms. Made prep time a lot shorter. Otherwise, you will need to pound out the chicken breasts to approximately 1/4 - 1/2 think.

Chicken Breast, no skin, 17 ounces
Spinach, frozen, 2 cup
Prosciutto, 2 oz
Trader Joe's Fire Roasted Red Peppers, 0.25 cup
Egg, fresh, 2 large
Bread Crumbs (Progresso Panko), .5 cup
Mozzarella Fresca Cileigini (Cherry Size), 90 gram(s)
Olive Oil, 3 tbsp (remove)
Cashew Nuts, dry roasted (salt added), .13 cup, halves and whole
Muir Glen Organic Chunky Tomato & Herb Sauce, .38 cup
Sea Salt
Ground Black Pepper
Spanish Paprika


How Do I Make Cook This! Stuffed Chicken?

Here is how you make Cook This! Stuffed Chicken:

Heat 1 tbsp Olive oil in saute pan or cast iron skillet over medium heat. When hot, add prosciutto strips. Cook until lightly crisp, about 1 minute. Add spinach, peppers & cashews. Cook about 2 - 3 minutes more. Season with salt and pepper. Reserve. Lay chicken breast flat on a cutting board. Season lightly with salt, pepper & paprika. Divide spinach mixture among chicken breasts. Include one Cherry Sized ball of Mozzarella per chicken breast. Cheat the components toward the top of the of the chicken. Wrap one end of the chicken around the mix and roll tightly, as if making a burrito. Secure ends with toothpicks. Combine eggs in a shallow bowl. Miz bread crumbs on a plate with salt & peppers. Drede the chicken first in the eggs, then in the bread crumbs, making sure the are fully coated. Wipe out the skillet. Heat the remaining oil in the pan over medium heat. Add the chicen and cook on all sides until crust is golden brown and chicken is cooked all the way through.Top with one TBSP of Tomato Sauce.
