2 Roasted Red Peppers
1/4 cup of Bread Crumbs
1/4 cup of grated Parmesan Cheese
2 tbsp Extra Virgin Olive Oil

In a large food processor, combine artichoke hearts, roasted red peppers, garlic cloves and herbs and process until combined.In a bowl, add the mixture to bread crumbs and cheese until thick and well mixed.Make a slit into the side of each breast of chicken being careful to not cut all the way through the other side. Open each breast and fill with stuffing and close. Use toothpicks to secure if needed.Sprinkle each breast with Cayenne Pepper (optional).Heat olive oil in pan and place chicken breast in hot oil.
