Here is how you make Parmesan-Stuffed Chicken Thigh:

Preheat oven to 450 degrees F. In a small bowl mix parsley, bread crumbs, Parmesan, and lemon zest. Season the mixture with 1/4 teaspoon each of salt and pepper. Divide mixture into 4. Carefully loosen the chicken skin with fingers; tuck the mixture under the skin of each thigh. Season chicken with salt and pepper. Place in a 9X13 inch roasting pan.
