Flatten chicken breast between 2 pieces of plastic wrap using a meat tenderizer, to about 4 by 6 inches in size. Put aside and pre-heat oven to 350.In large saucepan, cook onion in oil until softend and add chicken broth. Bring to boil, add stuffing mix, stir until combined, remove from heat, stir in spinach and cover. After a few minute the spinach shoule be wilted, add parmesan cheese. On a plate or clean work surface, put 1/6 of the stuffing onto a chicken breast. Roll up and place seam side down in a medium-sized baking dish.
