Cut chicken breasts in half, then butterfly if they are thick. Pound to about 1/4-1/2 in thick. Salt and pepper.Cook in small amount of olive oil:chopped red peppers, red onion, small shallot, and garlic. Let cool.In a bowl, mix cottage cheese, parmesan, mozzerella and salt and pepper.
