1 can (20 oz) canned pineapple in its own juice
1 cup sugar
2 tbsp cornstarch
3/4 c cider vinegar
1 tbsp soy sauce1 tsp ground ginger
1 chicken bouillon cube
2 green peppers sliced in 1/4" rings
3-4 lbs chicken(or a whole roaster broken into pieces)


How Do I Make Chicken Waikiki?

Here is how you make Chicken Waikiki:

Coat the chicken piece with flour and fry to golden brown. Put in a 9x13 inch pan with skin side up. Preheat oven to 350 degrees. Drain the pineapple juice in a measuring cup. Add water to make 1 1/4 cup. Combine sugar, cornstarch, juice, vinegar, soy sauce, ginger and the bouillon cube in sauce pan. Bring to a boil, stirring constantly. Boil until sauce in a golden brown and sticky. Pour over chicken. Bake, uncovered, 30 minutes. Then add the pineapple slices and the sliced green pepper. Baste well and bake another 30 minutes.Makes about 8 servings. We always had it with rice, but you could serve with a salad as well.
