2 tsp jerk seasoning

1 (20 oz) can no-sugar pineapple slices in juice
1 tbsp brown sugar
1.5 tbsp honey
0.5 cup pineapple juice


How Do I Make Jerk Chicken?

Here is how you make Jerk Chicken:

(Makes 5 servings)For best results coat chicken with olive oil and sprinkle on jerk seasoning and chill for about an hour.Preheat grill to med-high heat. Remove fat from chicken. Season chicken and chill.Drain canned pineapple and reserve juice. Season both sides of each pineapple slice with jerk seasoning (optional). Set asideIn small saucepan bring pineapple juice, jerk seasoning, brown sugar and honey to a boil.Reduce by half. (about 5 min.) Place chicken on grill about 5 min on each side. Place pineapple on grill about 1 to 2 min. per side. When chicken is done, serve with a pineapple slice on top and spoon over with sauce.For a great dinner make with my caribbean salad or mix up one of your own. Sometimes is good with basmati rice.
