Here is how you make Chicken Country Captain:

Cut the chicken into bite size pieces and coat with black pepper, salt, and about a teaspoon of paprika. Brown the chicken in the olive oil and remove it to a plate. Note that the chicken will not be cooked through at this stage. Chop the celery, onion, and red bell pepper and brown them in the same pan used for the chicken. Return the chicken to the pan. Add the tomatoes, curry powder, cayenne, and remaining paprika. Bring to a boil, then reduce heat and simmer for 25 minutes, stirring occasionally. Serve with rice.
