Slice carrots at an angle and add them. Chop onion coarsely and add to the skillet. Stir occasionally to keep from sticking.3) Cut chicken into bite-sized pieces (thinner will cook faster) and add to the skillet. Mince or press the garlic and add it with the ginger.
