1 tbsp. soy sauce
1 tbsp. dry white wine or sherry
1 tbsp. vegetable oil
1 tsp. grated fresh ginger

1.Cut chicken crosswise on a diagonal into very thin slices. 2.Cut zucchini crosswise into thin slices. 3.Cut red pepper into thin 1 1/2 inch strips and slice scallions.4.In a small bowl, dissolve cornstarch in cold chicken broth. Stir in soy sauce and sherry. Set sauce aside for approximately 5 minutes. 5.Heat a wok or large non-stick skillet until hot. 6.Add oil and heat until almost smoking. 7.Add chicken and stir-fry, separating slices, 2 minutes. 8.Add zucchini, red pepper, scallions and ginger. Cook over high heat, tossing constantly, until chicken is white throughout and vegetables are crisp-tender, 2-3 minutes. 9.Stir reserved sauce and add to pan.
