1 lb boneless skinless chicken breast
1 tbsp olive oil
1 garlic clove, minced
1 cup chopped green pepper
1 cup chopped onion
1/3 cup soy sauce (low sodium)
10 ounces pineapple chunks, reserve juice
2 tbsp white vinegar
2 tbsp brown sugar
1 tsp grated ginger root
1 tbsp conrstarch
2 cups uncooked brown rice

How Do I Make Sweet and Sour Chicken (OAMC)?

Here is how you make Sweet and Sour Chicken (OAMC):

1. Cut chicken into bite sized pieces and place in large zipper baggie.2. Add garlic, reserve pineapple juice, and ginger root. Seal bag and squish it around to coat the chicken with the marinade.3. Place bag in fridge and allow chicken to marinate for at least 45 minutes (I let it marinate all day).4. When ready, chop green pepper and onion and start preparing brown rice5. Heat oil in large skillet or wok6. Add green pepper and onion and saute for 2-3 minutes7. Add chicken and marinade and stir for about 10 minutes on med-hi heat until chicken is cooked.8. In a small bowl, mix together cornstarch, brown sugar, vinegar, and soy sauce. Stir it until there are no lumps then add it to the skillet.9. Stir for a few minutes and then add the pineapple chunks.10. Stir until the mixture has thickened slightly.11. Serve over brown riceIf you want to freeze, allow to cool and put in large freezer bag (not including the rice).
