Here is how you make Sweet and Spicy Chicken with Veggies:

1. Preheat oven to 4002. Toss together squash, zuchini, and potatoes with oil. Place in aluminum lined pan in single layer. Salt and pepper.3. microwave pepper jelly on high until melted (about 1 1/2 minutes) stirring every 30 seconds. Whisk in mustard, vinegar, honey, and hot sauce. Remove and reserve 1/4 cup of this mixture.4. add chicken to the remainder of the jelly mixture, toss to coat. 5. Put a wire rack over the vegetables and place chicken on rack.6. Bake in preheated oven until browned on top (about 20-25 minutes). Turn chicken over and bake until browned or temp of chicken is 165 degrees. (about 20 minutes more)7. Remove chicken and wire rack. Brush chicken with remainder of jelly mixture.8. Increase oven temp to broil and put pan with vegetables on upper rack in oven. Broil until tender and lightly browned.
