1. Lightly coat the chicken on the flour. Heat oil in a medium -large saucepan on low heat, add the curry paste and stir for 1 min. Add the shallots and chicken and cook, stirring over medium heat for 2-3 mins, or until outside of chicken is golden brown.2. Reserving 1/2 cup of the apricot juice, drain the apricots. Add the reserved juice and apricots, and the chicken stock to the pan. Bring to the boil, then reduce heat and simmer for 10 mins, or until chicken is cooked and tender.3.
