Here is how you make Amanda's Chicken Tenders:

Preheat oven to 425 degrees. Cut chicken into one inch cubes. In a bowl, mix cider vinegar and dijon mustard, whisk with fork until blended. In a separate bowl, mix bread crumbs and parmesan cheese. When ready to dip chicken, add baking soda to cider vinegar mixture. Add chicken to vinegar mix. Transfer to bread crumbs mix, coat well. Transfer to cookie sheet. Bake in preheated oven for 15 minutes. Turn off heat, let chicken sit in oven 5 minutes. Be careful not to burn.
