My brother-in- law is Isan Thai and for anyone who has been to Thailand knows Basil chicken is ubiquitous there. Way more than Pad Thai that most Americans think of and FYI there is nothing like "Thai" Peanut Sauce there. We introduced my brother-in-law to how great peanut butter is and he asked what else you could make with it. We laughed at the irony. But I digress. Besides the fact that I use waaaaay less oil (they put a whole ladle full for 1 serving; you wake up with oily lips every day) this tastes exactly like what you'd get on the streets of Bangkok. This is the recipe that he makes for me and gave me. In my opinion the spicier the better. Enjoy!

5-6 cloves Garlic
3 peppers of choice (I grow habaneros and thai chiles so I use a combo but my brother-in-law actually prefers our habaneros saying his basil chicken tastes best when he cooks it here)
2 tbsp Soy Sauce
1/4 c Brown Sugar (or to taste)

1 lb Chicken Breast
1 Onion (not traditional but I think it adds something and I like it)

A LOT of fresh Basil (I use a plant and a half of the "living Basil" or everything I can afford to prune if it's the summer and I have it)

Here is how you make Thai Basil Chicken (Krapaow Gai):

Put a very small amt of olive oil in the pan and heat. Add garlic and peppers and saute until fragrant Add oyster sauce, soy sauce, sugar and a little water. Add chicken and onion Simmer until chicken is fully cooked. Add basil and allow to wilt.
