Here is how you make Stewed Chicken Thighs:

Season Chicken with salt and pepper to taste and rub with 1 tsp diced garlic.Heat 1-2 tbsp olive oil in large saute pan over medium heat and lightly brown the chicken on both sides. Add onion to the chicken and brown until onions are translucent. Add diced tomatoes. Stir pan and continue cooking for 5 minutes more. Add 1 cup water to pan, cover pan and lower burner to medium low temp. Cook for another 2o minutes. Taking care that the liquid in the pan does not evaporate too much.
