2 oz Sundried tomatoes in oil, chopped

Here is how you make Chicken and Sundried Tomato Risotto:

Add 1 T of Olive Oil to a very large skillet. Cook the chicken until it is cooked through. While the chicken is cooking heat the water and chicken broth in a small sauce pan. After the chicken is cooked, move the pieces to the edge of the pan. Add the rice to the center of the pan. Cook the rice until translucent, then add the broth mixture ~1 cup at a time. Wait until all the liquid is absorbed before adding more. After the rice has cooked.
