Once the onions have cooked down a little bit, add the chicken. Cook the chicken in the olive oil over medium heat for about 20 minutes, or until it is all thoroughly cooked. by the way, you can adjust the amounts by using equal parts olive oil & cooking wine, just be sure to use enough oil to cover all the chicken so it will cook throughout. Season with salt & pepper while it is simmering. Or you could use some Tony Chachere's Cajun Seasoning if you have it. If not, salt & pepper work just fine. Once the chicken is cooked, add the cooking wine and the cut-up tomatoes. Stir & heat it until it just starts to boil, then turn the heat down to low and let it simmer, covered, for about 20 minutes, stirring occasionally. It is finished when the tomatoes have cooked down. Serve over rice (any kind, but it goes really well withJasmine rice) and use bread (optional) to soak up the juices.
