1500 grams whole chicken (2 chickens cut into 8 pieces each) skin removed
2 cups water
2 Maggi chicken cubes
2 tbsp Arabian spice mix (or you can substitute with garam masala or curry powder...but I don't know how it would taste)
1/4 cup cilentro (coriander) chopped
1 green bell pepper, chopped
2 cups of regular yogurt
3 cups of chopped tomato
1 cup of chopped onion
2 tbsp tomato paste
2 cups frozen garden peas



How Do I Make Chicken Makhtoum (UAE dish)?

Here is how you make Chicken Makhtoum (UAE dish):

In large pot, place chicken, water, Maggi cubes, cilentro, bell pepper, and tomato sauce. Bring to a boil and then simmer for 15 minutes. Add the garden peas. There should be minimal water left.In large pan, sautee the onions until a nice golden brown. Add the tomatoes and garlic. Sautee until the tomatoes become mushy. Remove from heat. Let cool and then puree in the blender. Add yogurt and blend until smooth.Add the yogurt mixture to the chicken. Stir well to mix in the yogurt.Bring to a boil and then simmer for 10-15 minutes or until the chicken is done.Serve with brown rice or pita bread. Very delicious.Note: You can also substitue shrimp, lamb, or beef for the chicken. Adjust the calories.Also, you can omit the 2 tbsp corn oil (240.4 calories) and just puree in the blender with the yogurt.
