This is an easy version of Captain's Chicken, so named because ship's captains made it while traveling back and forth from India. This is great for a slow cooker, too. What Are The Ingredients For Tomato and Curry Chicken Recipe?The ingredients for Tomato and Curry Chicken are: 4 skinless & boneless Chicken Breasts3 medium Onions, diced 2 large cans of crushed Tomatoes 1 can (6 oz) Tomato Paste 6 fl oz Water 6 cloves Garlic minced 5 tbsp Curry powder 2 tbsp Olive Oil 1 tbsp Salt 1 tbsp Pepper How Do I Make Tomato and Curry Chicken?Here is how you make Tomato and Curry Chicken: Dice onions and mince garlic. In large cooking pot, add olive oil, onions and garlic. Saute over medium heat until onions are close to translucent. Cut chicken breasts in two and add the 8 pieces to the pot. Reduce heat to medium low and cover, stirring occasionally to cook chicken pieces thoroughly. When chicken appears done, add tomatoes, tomato paste, water, curry powder, salt and pepper. Stir together well. Replace cover and cook over medium low heat, stirring occasionally. After about 1/2 hour, taste and add curry powder or salt to taste. Continue cooking for at least another 30 minutes.For slow cooker, add all ingredients at once, stir, and cook on medium low for 6 to 8 hours.Makes 8 servings. Serve over brown rice or egg noodles.
