I can home from work and realized I forgot to pick up something to go with my chicken for dinner. to tired to go back out, i open the cupboards and refrigerator and voila, a new side dish was born. This pasta dish is quick, lite and healthy and goes with so many dishes. It is one of my favorites. I used whole wheat bow tie * 12 oz cooked chicken breast sliced into tenders * 4 ounce(s) of Lite Philadelphia Cream Cheese * 3/4 cup(s) of Parmesan Cheese grated * 1/2 cup(s) of Diced Sun-dried Tomates * 1 cup(s) of Skim Milk * 1 tbsp. of Assorted fresh or Dried Herbs;oregano, basil, thyme and garlic * 3 tsp. of salt * 2 tsp. of pepper How Do I Make Chicken Alfredo with Sun-dried Tomatoes?Here is how you make Chicken Alfredo with Sun-dried Tomatoes: Serves 4-6Steps 1. Bring 5-6 cups water to boil with 2tsp salt in 3 quart pan. 2. Bring 3 cups water to boil in small sauce pan no salt needed. 3. Add pasta to large pot of boiling water and cook until tender. If using whole wheat or multi-grain pasta allow 3-5 minutes longer. Continue to check. 4. Reduce heat on small sauce pan to simmer. In heat resistant bowl large enough to sit on top of smaller sauce pan add cream cheese. Melt cream cheese until it resembles melted chocolate. stirring constantly. 5. Add 1/2 cup Parmesan Cheese to melted cream cheese and blend thoroughly. Whisk in skim milk 1/4 cup at a time. Whisk until sauce is a creamy texture. Turn heat of sauce pan up slightly but continue to watch and whisk. 6. Drain pasta completely but do not rinse. return pasta to pot and slowly fold in sauce add salt and pepper and sun-dried tomatoes. Fold until pasta is well coated with sauce. Turn into serving dish and add remaining Parmesan cheese.
